Have you tried the bone in chops from Fatted Calf (available at Berkeley Farmer's Market and, i believe, Ferry Building)? Delicious as are most of their sausages but especially the crepinettes.
Not yet, I but I really should, shouldn't I? I also want to try making sausage at home, with the help of Ruhlman's Charcuterie and our KitchenAid's meat grinder attachment. Fun!
